These cupcakes are as much fun to make as they are to eat! This super cute summer treat is guaranteed to make a splash!
Step 1:
A) Bake cupcakes according to package directions.
Step 2:
A) While the cupcakes are baking, let’s make the umbrellas! Using assorted colored papers for a fun look, trace a cup with a circumference of approximately 3 ¼" onto the back. Trace one circle for each umbrella you want to make.
B) Cut out the traced circles.
Step 3:
A) Fold each circle in half, and then in half again to create an “X” crease.
B) Open each circle and lay it flat on a cutting mat. Using a knife, cut a tiny 1/16" “X”-shaped slit along the crease at the center of the circle.
Step 4:
A) Fold each circle in half six more times to create tiny wedge shapes.
B) Fold each crease in alternating directions to create “mountains” and “valleys” on the umbrella.
C) Gently insert the treat stick through the small slit in the umbrella so just the tip peeks through.
Step 5:
A) Once the cupcakes are baked and cooled off, you can add the icing. Put the icing in a bowl and add a few drops of sky-blue food coloring to create the “water” color. Be sure to mix well. Note: We used six drops of coloring for a 12 ounce can of icing. However, you can adjust the amount of food coloring depending on how light or dark you prefer your “water”.
B) Apply icing to the entire top of the cupcakes using a knife or spatula.
Step 6:
A) Sprinkle brown sugar onto the top of the cupcake, covering about ½ to ¾ of the surface. This will be the “sand.”
Step 7:
A) Place flat licorice candy on the “sand”. This is the “beach towel.”
Step 8:
A) Lay a Teddy Bear Graham on the “beach towel”. For a fun option, place a few bears standing in the blue icing “water!” Tip: If you are worried about your bears sliding off, use a dab of icing to secure in place.
Step 9:
A) Insert the umbrella into the “sand”. Repeat steps 6 through 9 to decorate all the cupcakes. Enjoy!
